Traditional Cured Fish (Umai)

Description

Crispy fish tucked in corn tortillas with slaw, creamy sauce, and lime. A California favorite with bold, fresh flavor.

Ingredients

  • 1 yellow onion, chopped 1 red onion, chopped
  • 1 tablespoon minced fresh ginger root
  • 1 fresh red chile pepper, finely chopped
  • 1 tablespoon grated lime zest
  • 2 limes, juiced
  • 2 skinned red snapper fillets, cut into thin strips
  • salt to taste

Directions

  1. Combine the yellow onion, red onion, ginger, chile pepper, lime zest, and lime juice in a glass or ceramic bowl. Gently stir in the red snapper, and season to taste with salt. Cover and refrigerate until the snapper turns white and opaque, about 15 minutes. Serve cold.
