Scrambled Eggs with Cream Cheese

Description

My mother-in-law introduced me to this scrambled eggs with cream cheese recipe, and now it's my kids' favorite breakfast. They really love it.

Ingredients

  • 3 ounces cream cheese, softened
  • 2 tablespoons half-and-half cream
  • 8 large eggs
  • 1/3 cup grated parmesan cheese
  • 1/2 teaspoon lemon-pepper seasoning
  • 1/8 teaspoon salt
  • 1/2 cup crumbled cooked bacon
  • 2 tablespoons butter
  • minced chives, optional

Directions

  1. In a small bowl, beat cream cheese and cream until smooth. Beat in eggs, Parmesan cheese, lemon pepper and salt. Stir in bacon.
  2. In a large skillet, melt butter over medium heat. Pour in egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Garnish with chives if desired.
