Marinated Grilled Chicken Breasts

Description

Grilled chicken is a healthy, delicious main course to serve by itself—but there are tons of ways to dress it up, too. You can put grilled chicken in just about anything: sliced on top of salads, stuffed into sandwiches, shredded for chicken soups or skewered on a kabob. Or top the dish off with a heaping pile of grilled veggies and you’ve got yourself dinner!

Ingredients

  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1-1/2 teaspoons lemon juice
  • 1/2 teaspoon lemon-pepper seasoning
  • 4 boneless skinless chicken breast halves (6 ounces each)

Directions

  1. In a large resealable plastic bag, combine the vinegar, oil, lemon juice and lemon-pepper; add chicken. Seal bag and turn to coat; refrigerate for 30 minutes.
  2. Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 170°.
