Description
Melt together Swiss and cheddar cheeses with beer and mustard for a hearty snack.
Ingredients
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1 (12-ounce) bottle or can of pilsner
- 1/4 cup heavy cream
- 6 ounces swiss cheese, shredded (about 1 1/2 cups)
- 6 ounces cheddar cheese, shredded (about 1 1/2 cups)
- 1 teaspoon garlic powder
- 1/2 teaspoon worcestershire sauce
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 teaspoons honey mustard
- pretzels, cubed bread, sliced summer sausage or salami, roasted fingerling potatoes
Directions
- Melt butter in a medium saucepan over medium heat. Gradually whisk in flour. Cook, whisking constantly, until lightly browned, about 1 minute.
- Gradually whisk in beer and heavy cream. Cook, whisking constantly, until sauce has thickened and begins to bubble, 3 to 4 minutes. Slowly add cheeses, whisking constantly, allowing each addition to melt and become incorporated before adding more. Whisk in garlic powder, Worcestershire, salt, and pepper. Swirl in honey mustard and serve.
