Chicken Broccoli Rice Casserole

Description

This cheesy chicken broccoli rice casserole is a delicious combination of flavorful chicken, tender broccoli, fluffy rice and a crisp cracker topping.

Ingredients

  • 1 tablespoon butter
  • 1-1/4 cups uncooked instant rice
  • 1-1/2 cups reduced-sodium chicken broth
  • 3/4 cup 2% milk
  • 2 cans (10-1/2 ounces each) condensed cream of chicken or mushroom soup, undiluted
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 2 cups cubed cooked chicken breast
  • 2 cups fresh broccoli florets
  • 2 cups shredded cheddar cheese, divided
  • 1 cup crushed ritz crackers
  • 2 tablespoons butter, melted

Directions

  1. Preheat oven to 375°. In a Dutch oven, melt butter over medium heat. Add rice, broth, milk, soup, garlic powder, salt, pepper and onion powder until well combined. Stir in chicken, broccoli and 1 cup cheese, cook until heated through, 5-7 minutes. Top with remaining 1 cup cheese.
  2. Cover; bake until cheese is bubbly and rice is cooked, 20-25 minutes. Turn oven to a broil function.
  3. Meanwhile, in a small bowl, stir together crushed crackers and melted butter. Sprinkle over casserole. Broil 2-3 in. from heat 2-3 minutes, or until cracker topping is golden brown.
