Breaded Pork Chops

Description

These air-fryer breaded pork chops taste best fresh the day you make them, but you can store leftovers in a sealed container in the refrigerator for 3 to 4 days. Simply pop back into the air fryer to reheat. You can also freeze the cooked pork in freezer-safe bags for up to 4 months.

Ingredients

  • 1 large egg
  • 2 tablespoons fat-free milk
  • 2 tablespoons dijon mustard
  • 3/4 cup panko bread crumbs
  • 3/4 cup mashed potato flakes
  • 2 teaspoons ground mustard
  • 2 teaspoons minced fresh sage
  • 1/3 cup all-purpose flour
  • 8 thin boneless pork loin chops (2 ounces each)
  • 1/2 teaspoon salt
  • cooking spray

Directions

  1. In a shallow bowl, whisk egg, milk and Dijon mustard. In another shallow bowl, mix bread crumbs, potato flakes, ground mustard and sage. Place flour in another shallow bowl. Sprinkle pork with salt.
  2. Preheat air fryer to 400°. Dip pork into flour to coat both sides; shake off excess. Dip into egg mixture, then into bread crumb mixture, patting to help coating adhere.
  3. In batches, place chops on greased tray in air fryer basket; spritz with cooking spray. Cook until a thermometer reads at least 145°, 5-6 minutes, turning once.
