Description
This bow tie pasta salad combines delicious vegetables, herbs, cheese and salami and is topped with a tangy vinaigrette.
Ingredients
- 1 pound uncooked bow tie pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped red onion
- 1/2 cup cubed salami
- 1/3 cup cubed provolone cheese
- 1/4 cup chopped sweet red pepper
- 1/4 cup minced fresh parsley
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 1/4 cup red wine vinegar
- 2 tablespoons grated parmesan cheese
- 1 tablespoon dijon mustard
- 2 garlic cloves, minced
- 2 teaspoons italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup olive oil
Directions
- Cook pasta according to package directions; drain. Transfer to a large bowl; stir in tomatoes, onion, salami, provolone, red pepper, parsley and olives.
- In a small bowl, whisk together vinegar, Parmesan, mustard, garlic, oregano, salt and pepper. Slowly drizzle in olive oil; whisk until combined. Drizzle dressing over pasta mixture; toss to coat. Cover and refrigerate until chilled, 1-2 hours.
