Description
Giving bison the meatloaf treatment is a great way to keep this lean meat moist and packed with flavor.
Ingredients
- 2 slices of white bread
- 1/3 cup milk
- 2 minced garlic cloves
- 1/2 cup grated carrot
- 1/2 cup grated zucchini
- 1/2 cup grated onion
- 2 tablespoons melted butter
- 1 pound ground bison
- 1 egg (beaten)
- 1 1/2 teaspoons salt
- 1/4 teaspoon minced rosemary
Directions
- Soak white bread in milk; mash to a paste.
- In a skillet, cook garlic and grated carrot, zucchini, and onion in melted butter over moderate heat until butter starts to brown; scrape into a bowl and let cool.
- Stir in the bread paste, ground bison, egg, salt, and rosemary. Form the meat into a 4- x 9-inch loaf on a baking sheet. Bake at 350°F for 45 minutes. Let rest for 5 minutes, then slice and serve.
