Description
I always have leftover cranberry sauce after Thanksgiving, so I created this banana cranberry bread recipe which is very moist and delicious.
Ingredients
- 2 ½ cups white sugar
- 1 cup shortening
- 3 large eggs
- 3 mashed bananas
- 1 cup cranberry sauce
- ½ cup milk
- 1 teaspoon vanilla extract
- 4 cups all-purpose flour
- 1 ½ teaspoons baking soda
- 1 ½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup chopped walnuts
Directions
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease two 9x5-inch loaf pans.
- Beat sugar and shortening together in a large bowl until light and fluffy. Beat in eggs, one at a time, then beat in bananas, cranberry sauce, milk, and vanilla.
- Whisk flour, baking soda, baking powder, cinnamon, and nutmeg together in a bowl; gradually stir into banana mixture. Fold in walnuts. Pour into the prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted into centers comes out clean, 50 to 60 minutes. Cool in pans for 10 minutes, then turn out onto a wire rack, and cool completely.
