Banana Butterscotch Bread

Description

This butterscotch banana bread is a delicious version of traditional banana bread and is extremely popular whenever I make it. I got the recipe while staying at an old bed and breakfast in Maryland and make it every year around the holidays. I don't use walnuts, but I hear it is a delicious addition. This recipe has become a tradition!

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground nutmeg
  • ¾ cup white sugar
  • ½ cup butter
  • 1 large egg
  • 3 ripe bananas, mashed
  • ¾ cup butterscotch chips
  • ½ cup chopped walnuts

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.
  2. Sift together flour, baking powder, cinnamon, baking soda, salt, and nutmeg in a bowl; set aside.
  3. Beat sugar and butter with an electric mixer in a large bowl until light and fluffy. Beat in egg, then stir in mashed bananas. Pour in flour mixture and mix until just combined. Fold in butterscotch chips and walnuts until incorporated. Pour batter evenly into the prepared pans.
  4. Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, 25 to 28 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
