If you have beginner cookie-baking techniques down, then this class is for you. The cookies in this online cooking class aren't your typical drop cookies like chocolate chip or oatmeal raisin. In this class, you will learn how to bake cookies that are impressive and delicious. Millionaire's Shortbread is Britain's triple-decker combo of buttery cookie, sweet caramel, and dark chocolate—almost like a Twix bar. Each component requires some time, but the end result is worth it. We ensure the buttery shortbread layer doesn't crumble by compressing it with a spatula right after baking. The key to the caramel layer is an instant-read thermometer, since the caramel needs to be cooked to between 236 and 239 degrees. We temper the chocolate layer by melting large chunks of chocolate and mixing in smaller shards, which makes the chocolate set up snappy and shiny. Italian Florentine Lace Cookies have a reputation for being unpredictable, since the recipe requires cooking sugar and making caramel. In this class, we start by answering the question “what is the Mediterranean Diet?” The Mediterranean diet is about what the cuisines surrounding the Mediterranean Sea have in common: a daily emphasis on vegetables and fruits, beans and lentils, whole grains, more seafood than meat and poultry, and heart-healthy olive oil. With all of the countries in the Mediterranean, this means that there isn’t a single “diet” that encompasses the entire Mediterranean region—the spice-laden dishes of Morocco bear little resemblance to the lemon and caper-laced cuisine of southern Italy. The one commonality is good flavor. You’ll learn how to shop for the Mediterranean Diet and how to craft a meze platter, then you’ll apply the techniques you’ve learned to prepare hummus, tabbouleh, stuffed grape leaves, sizzling garlic shrimp, and pan-fried halloumi recipes.
